Chef T began his journey as an apprentice Chef in New Zealand (we won’t hold that against him) at The Park Royal, Christchurch. He then moved onto Wanaka Edgewater Resort where he was a heli-ski instructor by day and Chef by night…
After his time as a ski bunny/Chef, Tony moved to the city of Pineapples and Banana Benders where he opened the well-known Il Centro Restaurant. He did such a great job there that Brett’s Wharf commissioned him to open their seafood restaurant around 1995.
